Sambal Tempe

Sambal Tempe ni memang favourite kami masa bulan puasa.. Budak-budak berselera makan especially masa sahur.. Jadi ala-ala appetizer gitew.. Masa malam pulak depa buat snek.

*Gambar hiasan.. tak sempat nak amik gambar sambal yang dah siap.. terlalu cepat habis...

Kawan nina ada resepi gempak sambal tempe.. tapi bila ditanya.. dia buat dek ke.. tak taulah.. yang pasti.. ini resepi tibai.. memang tak bubuh belacan sebab takut hidung ni rompong hehe

Bahan-bahan
2 paket Tempe
1 paket (2-3 genggam) Kacang Tanah - Basuhla siap-siap dan tos.. baru la tak meletup dan senang garing.. ;)
2-3 genggam Ikan Bilis.. yang saiz besar skit pun okay..

1 bawang besar
3 bawang putih
2 - 3 sudu besar Cili Boh (ikut la selera.. tapi nina pakai 2 jer)
1 sudu kecil Assam jawa Adabi
Garam
Gula.. banyak skit dari buat sambal biasa..
Cara-caranya:
1. Goreng ikan bilis..
Nina basuh dulu dan toskan ikan bilis.. kalau basuh dulu.. nina selalunya goreng dua kali.. sekali.. mesti tak garing. Setengah tu tak basuh dulu.. memang rangup.. lagila kalau ikan bilis saiz besar.
Kalau dah rangup, nampak melentik2 ikan bilis tu.. masaalahnya.. kalau nak tau rangup ke tak, kena tunggu ikan bilis sejuk dulu.. Nina memang malas bab goreng benda rangup ni.. either soggy atau hangit! cait! bukan nak patahkan semangat.. tapi kalau dah tau.. jadi gitu x la frust sangat.. :)
2. Potong dan goreng tempe.
Nina selalu potong nipis-nipis, baru rangup.. goreng agak lama skit ya.. baru sedap.. nina tak basuh pun tempe tu..
3. Goreng Kacang Tanah..
Bab ni memang tricky sikit. Sebab itulah takde gambar.. Kalau amik gambar.. comfirm la hangit.. Janganla nak tinggal2. Goreng kacang ni memang macam ribut.. Jangan Pandang Belakang! Pandang kacang je.. Nina dapat tips dari pekerja kantin sekolah.. hehe.. dia goreng rangup. Katanya tak payah basuh pun kacang tanah tu.. (Tapi nina basuhla jugak).. Ini tips dari dia ya!
Letak minyak (selalu nina pakai kuali paling kecik dan minyak baru.. sebab minyak tu akan hitam dan kena buang.. jadi pakai minyak cukup-cukup jer)..
Bila minyak panas, masukkan kacang.. goreng-goreng.. dia akan bunyi prap prap prap (serius memang bunyi gitu.. tunggu sampai ramai2 bunyi prap prap tu) .. lepas tu angkat bila dia kebiru-biruan (i know it sounds crazy tapi at one point memang nampak kebiru-biruan!) hehe x caya?? cubalah!
JANGAN TUNGGU SAMPAI KALER DIA MACAM KACANG GORENG..
sebabnya.. kacang ni lambat sejuk.. jadi it will still cook as it cools.. memang la hangit kalau buat gitew..
KALAU TAK RANGUP.. SILA TUNGGU SEJUK DULU SEBELUM GORENG LAGI SEKALI!
hehe.. saja pakai capital letter.. bukan apa .. sakit hati bila kacang terhangit.. dah banyak kali kena dah... kalau dah terrer .. bagi tips tau!!! ;D
4. Tumis bawang, bawang putih yang diblend tadi.. pakai minyak ikan bilis.. tumis sampai wangiiiii.. pas tu barulah masukkan cili.. selalu nina masukkan garam dan gula masa tumis.. (kes malas sebab cepat sikit dia masak kikikikik).. Masuk gula lebih-lebih skit.. baru la sambal tempe melekit2..
Bila gula dah okay.. jangan masuk2 air masa dah masuk kacang n ikan bilis.. memang sambal kering je..
Gaul-gaul semua tempe, kacang dan ikan bilis dalam kuali (nina tutup api masa gaul) Tunggu sejuk dulu baru masuk container.. buat makan sahur.. nina kalau masak 2 paket tempe ni.. sempat 2 kali sahur je hehehe)..

My Fluffy Omellette

My friend just send me a message asking me how to make my omellette. Whenever she comes to my home for dinner, omellette is definitely a must.. The secret? I used to put a little bit of milk.. but now, since my kids just love finishing every bit of the milk, I stop buying them. It's just so frustrating when you plan to make bread pudding or caramel only to realise the milk is all gone.
A word of caution though, too much milk will make your omellette watery and less appetizing. Anyway, the secret of my fluffy omellete is simply by scraping the egg again and again before it sets creating a ripple in the inside of the omellette giving a fluffier effect. It's hard to tell in words.. this is not my perfect omellette, it's so difficult to handle the camera at the same time, but it helps..
Ingredients:
4 eggs (to cater my big family of 7 :P)
4 tablespoon of milk will do i guess, normally i just pour without measuring.. (optional)
a pinch of salt
white pepper
1. Heat the pan with a little bit of oil. This is too much actually.

2. Simply pour the egg (I only beat the egg a bit..)

3. Here's the tricky part, scrape your egg using a ladle, let it set for a while, and scrape again.. not in quickly motion though.. you just don't want to end up having scrambled egg hehe

4. Normally, it's fluffier but since I was handlling the camera at the same time, I missed a few scraping [sigh].. it should be fluffier.. and toss (I enjoy playing chef when I toss the egg over, my kids go wooooo!) and wait until the other side is cooked. If you can't toss it, simply slide the omellette into a plate and put the egg back into the pan, or rather, put the pan on the plate and turn it over.. if you know what I mean.. try it!

Beehoon Goreng Bertaucu!

This is a favourite meal of a very good friend.. I must have underestimated my beehoon because for me beehoon is the hardest meal to make hehe.. it's either too soggy, or not soft enough.. A lot of my friends laughed at this but that's the truth. At least until this friend of mine said how she loves my beehoon and asked for my recipe. So, here it is.. specially dedicated to her.. :P In case you are wondering why it's just so togel without any vege, simply because this is a very last minute meal when there's nothing else to cook or i don't have anything else in the fridge except taucu and udang kering :)

Bahan-bahan:

1/2 - 3/4 paket beehoon direndam air

1 bawang besar
3 bawang putih
segenggam udang kering dibasuh dan direndam air panas sekejap
1 paket taucu (RM0.60)
1 sudu kecil cili boh (tak pedas, kalau nak pedas tambah lagi)
dlm 2 sudu besar sos tomato

Hiasan:
1 telur

Cara-caranya:

Jangan masuk banyak sangat.. nanti beehoon dah masak, tapi masih lagi berair.

4. Masukkan beehon yang telah direndam. Ada setengah kawan tu siap rendam air panas sebab masak last minute tapi nina tak berani sebab kadang-kadang terlalu lembik, bila masak hancur. Beehoon jadi pendek-pendek. Menyamps!

5. Kacau rata, kalau masih keras, masukkan air sikit. At this point, rasa macam.. jadi ke beehon aku ni.. keras semacam je. but continue stirring..

6. Bila dah masak, rupa dia macam ni..

Nina suka sangat makan beehoon dengan telur dadar yang dipotong. Tapi lagi sedap kalau telur ni digoreng nipis. Gulung-gulung dan hiris nipis-nipis. Sedapnya!!!

Pudding Roti with Apple

There is no specific recipe when making bread pudding.. I used leftovers from my bread.. Bread made using your own breadmaker does not last long and soft unlike Gardenia.. So I just used it so my kids will finish it..

This was the last apple I had and nobody wanted it because it was not crunchy.. The raisins were the ones I craved during the first months of pregnancy.. Baking them made it fluffy and plump.. and the pan is the smallest that I have and we just scoop the puding with spoon. Who says it has to be perfect?

Add whatever ingredients you want, chocolate, bananas just name it.

Try it!

Ingredients:

milk
1 egg
sugar (2-3 tablespoon will do.. i don't like it sweet)
a pinch of salt

bread
1 apple
dots of butter (I used Farmcows-not pure butter)
raisin

Method:
1. Arrange the bread (you can cut them in small pieces so it will fit in the pan).

2. Arrange the sliced apple on top, add the dots of butter and just sprinkle the raisins. Put as much as you like.

3. Mix milk, egg, sugar and salt together. If you like the pudding to be soft, use more milk enough for the bread to absorb all the liquid. Pour on the bread.. Make sure you cover all the bread.. Too little milk will make the pudding hard.. Bake in the oven at 180 c until it smells really nice.. don't go and enjoy the smell too much.. it'll burn in the oven.. he he

Tips:
When you bake.. rely on the smell.. not really on the time the recipe gives.. sometimes I enjoy the smell of baking that I forgot to take it out from the oven. Once you smell the burning pudding.. it's too late.. the same goes with cookies and cake..

4. Dig in using spoon!

Kerabu Mangga

This is definitely not the ones you can find at the restaurant because it's just a simple one.. My family (even my extended family) love it! I used 2 mangoes and it was finished in a flash. The ingredients are just basic and we just love the simplicity.. But if you want to add fish sauce.. feel free to add.. But only a dash or two and don't add salt at all. Maybe I'll add another recipe with fish sauce..
I use a special grater to make this 'kerabu'. It looks like a peeler but with a different blade. It's a gift from my best friend, Linda, who bought it in Thailand when she went there with her biker husband.
But if you don't have a best friend like her, try to find it in 'Kedai Barangan Plastik'. They might have. Or maybe I should sell it online.. he he..

Ingredients:
2 mangoes (any type will do but 'mempelam epal' is the best!)
1 onion, cut into halves.. slice thinly
a pinch of salt
1 teaspoon sugar
1 ripe lime - only the juice of course

1/3 cup coarsely crushed peanuts (I just buy in packets- the ones you buy at Mesra and munch in the car when you travel to kampung)
3-4 cili padi - if you like add more.. I normally slice and put it in a separate bowl..

Method:
1. Grate the mango. Make sure you grate as long as you can. Mix with sliced onion and chillies.
2. In a separate bowl, put the salt and sugar together with the lime juice, stir until everything dissolves. Taste and add sugar or salt to taste.
3. Pour on the grated mango.. add in the peanuts
4. Voila!
