Pudding Roti with Apple

There is no specific recipe when making bread pudding.. I used leftovers from my bread.. Bread made using your own breadmaker does not last long and soft unlike Gardenia.. So I just used it so my kids will finish it..

This was the last apple I had and nobody wanted it because it was not crunchy.. The raisins were the ones I craved during the first months of pregnancy.. Baking them made it fluffy and plump.. and the pan is the smallest that I have and we just scoop the puding with spoon. Who says it has to be perfect?

Add whatever ingredients you want, chocolate, bananas just name it.

Try it!


Ingredients:

milk
1 egg
sugar (2-3 tablespoon will do.. i don't like it sweet)
a pinch of salt

bread
1 apple
dots of butter (I used Farmcows-not pure butter)
raisin

Method:
1. Arrange the bread (you can cut them in small pieces so it will fit in the pan).

2. Arrange the sliced apple on top, add the dots of butter and just sprinkle the raisins. Put as much as you like.

3. Mix milk, egg, sugar and salt together. If you like the pudding to be soft, use more milk enough for the bread to absorb all the liquid. Pour on the bread.. Make sure you cover all the bread.. Too little milk will make the pudding hard.. Bake in the oven at 180 c until it smells really nice.. don't go and enjoy the smell too much.. it'll burn in the oven.. he he

Tips:
When you bake.. rely on the smell.. not really on the time the recipe gives.. sometimes I enjoy the smell of baking that I forgot to take it out from the oven. Once you smell the burning pudding.. it's too late.. the same goes with cookies and cake..

Butterscotch Sauce (for Pretzel)


I found this recipe in my "Housekeeping" Recipe book. It's great as it is so simple to make. It is not as good as the ones you buy at Auntie Anne's but then, it's worth it as it is just soooo easy to make! All you need is a whisk!

Ingredients
1/2 cup brown sugar
1/4 cup susu ideal
1 tbspn butter
1/2 tspn vinegar (don't ask me y he he)
a pinch of salt

Method
1. Boil at high heat, once boiled, kecilkan api and whisk until it thickens.. but not too thick as it will thicken once it cools.. You don't want to caramelize it!

Tip:
Use a whisk and keep on whisking...

Don't make more than this, the sugar will start to crystallize the very next day.. you really have to finish it. (maybe i should try to reheat the crystalized sauce to see what happens..)

Cinnamon Pretzel


I took this recipe from copycat.com. It's a hit among the kids! They simply love it. But then it tends to harden the next day but you can just sprinkle some water, cover with a plate and reheat using the microwave. I used my breadmaker.. so it's really soft! But you can knead yourself, takes a little more energy.. but it's worth it. Maybe I should try freeze them in the freezer..

Pretzel
Ingredients
A - Mix together until everything dissolve
1 1/2 cup lukewarm water
1 1/4 tbspn mauripan
2 tblspn brown sugar

B - Mix together
1 1/4 tspn salt
1 cup bread flour
3 cup AP flour

C - Mix together when waiting the dough to rise
1 cup tap water
1 tblpn baking soda

Method
1. Add water mixture to the flour bit by bit..
2. Knead until the dough is smooth
3. Allow dough to rest for 1/2 hour

While waiting, you can:-

4. Mix 1 cup of tap water with 1 tbspn of baking soda. Make sure the bowl is not too small as you have to dip the pretzel in the solution.
5. Sprinkle flour on your baking tray.

Then continue with the dough
6. Using scissors, cut a bit and roll to make a long rope. Rolling backwards is definitely easier than moving back and forth.. Make sure the rope is not too thick.. It will rise later.. Unless you like the pretzel to look clumsy.. (my first ones were really messy and bulky.. ha ha ha)



7. Try to imagine working at Auntie Anne's.. (actually, I stopped at Auntie Anne's kiosk to see how they make their pretzel.. it's tricky a bit.. but then. you'll get used to it!)

8. Dip in baking soda mixture, quickly put on the baking tray. Terbalikkan.. takla terbukak pretzel tu nanti.. (I normally make a few pretzel before dipping in the solution.. your hands will get sticky.. and you'll make a real mess)



9. At this point, it will rise again.. and bake at 190 c for about 10 minutes

Tip:-
Don't wait until the pretzel gets brown.. it will be hard. Look at the the first pic, the ones without topping is really pale and yet you can see brownish colour of the bottom part of the pretzel.

Unlike baking cakes, when baking bread, you can open the oven to check..

Topping

Ingredients
Melted butter

Mix this together
Brown sugar (ada jual kat kedai baking suppy)
Cinnamon


Method
Dip the pretzel in the melted butter.
Quickly dip the pretzel in the sugar mixture.

Making Teh Tarik

I remember when I first got married. It was always Milo. That's the only drink I can make.. I really wanted to learn how to make teh tarik.. I really thought it's a skill but the trick is to get a good tea.

It was a colleague of mine who taught me how to make 'teh tarik'. She practically instructed me and waited until I managed to make it. I can never thank her enough.. It might be a small thing for some of you but then for me, it is a personal accomplishment!

So, I'm telling you now..

1. Use 'Teh Cap Istana'. It's the best! If you can't find it, just get any "teh timbang"..

I used to peek at the shelves of any kedai with good 'teh tarik', you will see a lot of brand that you have never seen before..

2. I used 3 moderatedly heaped tablespoon of tea for my 'tupperware' jug. The colour will be really dark. Make sure you use really hot water to bring out most of the aroma and taste. I used the cloth mamak always used.. and it has changed from white to god knows what..

3. Just add condensed milk until the colour turns out nice.. Make sure it's not too milky.. it'll be sweet. If it's bitter, simply add more hot water and condensed milk. Ha ha ha.. It sounds stupid! but that's the trick.. normally I used slightly more than half.. There's no recipe really... just a good brand of tea and the right amount of condensed milk.. Try it! You'll love it!

Pancake


This will make 10 pancakes if you use medium sized "senduk". The baking powder makes the pancake soft and brownish.. the ones we normally find served at hotels during breakfast..

Ingredients

2 cups All purpose flour
1/2 cup sugar
1/4 cup powdered milk
1/2 tspn baking soda
a pinch of salt

1 3/4 cup water

Topping

Golden syrup / honey

Method

1. Mix everything together with a whisk (except water)
2. Create a well in the middle, pour water and mix well
3. Heat non-stick pan, put a little bit of oil..
4. Scoop into pan.. turn over when the pancake starts to buble..
5. Wait until it's brown
6. Serve with golden syrup or honey.

Donut

Donut

Ingredients:

A
500 gm Tepung roti (high protein)
11 gm Instant yeast (1 paket mauripan)
40 gm Butter
70 gm Castor sugar
2 gm Garam

B
320 gm Susu (carnation)
1 Telur (A)


Method:

1. Gaul rata A, masukkan B, uli sampai lembut (tak payah elastic macam uli roti). Kalau pakai mixer, speed 2 10-15 minit.

Kalau uli tangan boleh uli, rehat sekejap, uli lagi, rehat lagi sampai cantik. Tak teruk uli kalau rehatkan sekejap.

3. Rehatkan 5-10 minit.

4. Letakkan sikit tepung untuk mencanai. Tekan doh dengan tangan, tekan dengan rolling pin (satu hala sahaja). Angkat-angkatkan doh (macam sidai kain, kalau tak buat macam tu, bila pakai acu donat, dia mengecut, donat tak cantik).

5. Rehatkan lagi, kalau tak rehat masa dah canai, donat keras sebab dia tak sempat nak naik dah goring. Goreng sekejap je.. Bubuh castor sugar.


*Nina selalu goreng dalam periuk non stick yang kecil, sekali goreng 5 biji (acuan kecil). Azly n co suma suka acuan kecil, sekali ngap je, tak comot rumah. He He..

Hiaskan donut… senang sahaja, cairkan coklat masakan dalam microwave 340w (medium)– 2 minit. Celup donat dalam coklat, bubuh sprinkle. Yum yum
